We are looking to migrate from an old custom built cart to cs-cart for the below website, the one thing we are unsure about is if cs-cart has the option for some products to have a set price and a weight price…i…e the customer enter 200 and they get 200 grams of the item.

There is no Unit Of Measure setting in cs-cart.
Probably best solution would be to have a product setting that would indicate that the quantity is grams or KG or whatever and have it display a common dialog in the product detail page indicating that “Quantity is amount in grams” or similar.
