Hello,
I don't see a place to enter the product's manufacturer, brand and sort order (on the category page). Am I just not finding these on the product creation page or do I have to add them as Product Features? If so, can they be part of a product import?

You use Product Filters for Manufacturer/Brand.
You can set the default sorting somewhere in the Settings area but I don't remember exactly where.
You import product features on the Import Products page. See the KB for format info.
