For example when I change language from Italian to English, I would like that only products of the English language appear, not all products. How to do it? Thanks in advance

Have you tried cs-cart localization feature?

does localization alllow you to classify a product like that? The only other option I thought of would be to use categories and then add some code to restrict based on language selection.
