The template is located here

/design/backend/templates/components/menu/logo_menu.tpl

It also has hooks and can be changed through the module

For example, you can use built-in My changes module to make this modification

You can also simply change the following files

/design/backend/media/images/cart_logo.png
/design/backend/media/images/cart_logo_white.svg (for the dark theme)
