When you mark an order as complete (dispatched) is there any way of showing in cs-cart when it was marked complete/dispatched rather than having to did through paper work?

If I understand you correctly, you would like to view the history of the order? When it was shipped, when the status was changed to Processed, etc, correct?
This is a feature that has been requested by many people and it currently listed as Planned on the roadmap (https://www.cs-cart.com/roadmap.html).
I think this will be realy helpful to store owners.

That’s correct, I did not realise the function was not there until I was asked when an item was shipped.
