This may sound like a silly question but after all these years I am still no expert.
I have one CS-Cart store using one database.
There are some other databases on my server which were probably built
for testing other carts.
Can I safely delete the others ?

If these databases aren’t used by any of your sites and you no longer need them, you can safely delete them. If you are worried that you might need them at some point in the future, you should back them up before deleting them.
