I do not want to generate an invoice, but rather a purchase order.
How do I do this?
My problem is - say you want 4 Kg beef fillet. The actual fillet weight once prepared could be 4.05 kg or 3.89 kg.
That is why I would rather let customer place purchase order and I will invoice offline.
Any solutions or ideas?

Easy to accomplish, simply create an offline payment method called “Purchase Order” & assign whatever payment terms Net 30 Days, Payment Upon Receipt, etc. You can then invoice them seperately after your pricing adjustments have been made so they receive an accurate invoice amount.
I have a payment method called purchase order - offline using template po.tpl
this creates an invoice.

This is nothing more than a naming issue, just change the name from “Invoice” to “Sales Order” or “Order Confirmation” or “Purchase Order” whatever you prefer.
Admin Panel>Content>Languages>Translations>(Search for phrase “Invoice”, change as desired)

Ok, as explained above, then also search for “Print Invoice” and change to your desired wording.
