    As budgie breeding businesses were established in Amsterdam, Paris, Cologne and the zoological gardens of many major cities, keepers discovered just how prolific budgies could be. This, as Bolle had anticipated, pushed the price down on the Continent as the Australian bird began its ascendancy over the canary.
    The budgies seemed to find life particularly agreeable in the south of France where they established a stronghold in Toulouse, ‘The Pink City’, in the 1880s. The Toulouse goose, a very old breed of placid domestic goose known as the producer of foie gras, was fatly famous as top bird of the region when the little Aussie chick began turning heads.
    A fairground bird dealer named Bastide was among the first to start breeding the perruche ondulée (budgerigar) in Toulouse. A visitor to Bastide’s home in Avenue Frizac described how the dealer had transformed a quadrangle into a huge tiered aviary comprising 48 shipping-container–sized cages housing more than 15,000 budgerigars, with breeding pairs at the ground level and young birds in the upper ones.
