How easy/difficult would it be to transfer changes from a dev store to the live store?
I am thinking about changing my website theme, so my plan is to first install it on the dev store, and then work out what needs to be changed and fixed. Once I install it on the live store, would it just be a case of copying across the modified files or the whole theme folder (if that would even work)?
The main reason for asking is because there would be a lot of changes to make and I want to minimise the amount of changes customers will see.
I mean the CSS, the visuals of the website. It would be easier than having to close the store for a few hours while I redo all of the changes I made in the dev store.
if all you're modifying is css, you can easily do this via the my_changes addon by using a custom styles.css. You can then simply copy over the styles.css to your production site and clear the cache.

Agree with @tbirnseth. Also if you change block locations/content, it can be transferred with import/export layout feature
