I have a very large store and a lot of sales. The admin panel takes a minute to load completely because of all the statistics its calculating.

Yes - set the statistics to only load a day instead of a year :)
The other issue is their hidden image they use for tracking which seems inappropriate to me.
They insert a tracking image is returning a 504 after 60052 milliseconds

They do so in a manner thats hard to remove. They base64 encode it and then insert it after decoding it. The only reason they would do this is to make it hard for novices to remove.

After looking at the code I briefly looked for that setting but couldn't find it. Where is it?

To me it looks like its hard coded in the controller to be a the last 30 days of sales.

Its not there for me.
Also that would not be permanent. The default behavior should be configurable.
