Is it possible to already "design" a new storefront whilst the domain is not yet available.
In this case a customer get's ported from Woocommerce to CsCart. The old site is still in operation.
What would be the best steps to complete a new site, add the products and do some previews without the availability of the domain (since a website is running on that)

You can create an addon domain store2.com and set up the second storefront. You can test it on the subdomain you have chosen for the new addon domain, say, store2.example.com - just follow the procedure and point the new domain to the document root.
When everything is ready with the migration you can change the ns1 and ns2 of the store2.com to point to the example.com nameserver.
Not tested with Ultimate but works with MVE.
You can also install CS-Cart into some subdirectory of the current domain (i.e. store.com - existent store, store.com/new - CS-Cart) and close it for the public access.
