Per your original query, you wanted to be able to notify a user some delay in shipping date (from normal like tomorrow). due to either transaction time with your drop-ship supplier and/or for them to get stock. So having an availability of say 1/1/2018 would imply that the product is available, but your drop-shipper may have to create it and ship it and that might be a delay of 4 business days.
So I had approached this to have a separate product setting that would indicate the delay in days that would also apply to the availability date (if it were in the future). I.e. if the delay days was 4 and this is Wed May 10th and the product has an availability date of May 16, that 4 business days would calculate to a ship date of May 22rd which is what would be displayed to customers. If the product is considered already available (like an avail date of 1/1/2018) then it would be 4 business days from today (Thur May 10) would be a ship date of May 16th.
If all you're wanting it so to use the availability date as the ship date, then all you need is a language variable and to use a my_changes hook to apply the text (with substitution) to the product/checkout pages.
I'm not sure (because I haven't looked) but I don't believe products with future availability dates are shown in listings until after they are available....
