Not sure if I'm doing something wrong but when I create an order in the admin backend it works fine. I would select my product, choose the option and it works as intended. But if I then edit that order, and change it to a different option, the price doesn't adjust itself and keeps the original price (product + 1st option)
Any ideas why this doesn't automatically update itself?

Please post this issue to the bug tracker. It looks like a bug

You should remove Stored price checkbox which is located near the price. Then recalculate totals to get correct value.
The mentioned checkbox allows administrator to set any price for the items
