May I know the paypal processor store in which folder, since paypal overwrite some of the data in database.

All files can be found in the PayPal addon, which is located in the following directory
app/addons/paypal
Check your settings for the PayPal Payments addon in Addons > Paypal payments > Instant Payment Notification Settings > Override customer info checkbox. It is checked by default. Uncheck it and save. It allows PayPal to update the customer data.
