The biggest reason is getting past spam filters. Mailchimp is trusted by many of the big sites (yahoo, aol, hotmail, gmail, etc.) and therefore even if the message gets some points against it for content, it gets points for it due to mailchimp. Most merchants really have no idea how to even setup their email environment so that mail isn't viewed as spam by the more sophisticated mail systems.

You mean that you can spam bypassing the spam filters of the email clients?

No. Spam is detected in many ways. It's done by scoring the attributes of an email. I.e. the sender, the subject, content, whether it's html only or text and html, keywords, etc. So some of the email marketing folks cause the spam filters at larger companies like Yahoo, Gmail, etc. to overlook some things that would normally get counted against the email....

This has nothing to do with the actual email client (the email reading application) but is more related to the filtering of spam at the server where the email client is being served from.
