Where OH WHERE is detailed info about each order stored including payment fees (Paypal, etc). Why on earth is this not included in the Sales Reports?

What do you mean by payment fees? Default “payment surcharge” feature or payment provider fees which are shown in their merchant panel only?
Payment provider fees. We use PayPal & Stripe. I know PayPal passes the fee info back on the return url - you can see it in the logs. I would assume Stripe does also. Our old system included this on reports and we use it to calculate payroll. We deduct actual fees from vendors; not a flat %.
We also need to know when an order was paid by points or gift certificates. This might be included in the discount column but I'm not sure yet - it's our first month doing reports since we launched. Sorry if that's a dumb question!
Damir was right. There is no such a feature in the clean installation. Additional code modifications are requried
