Deleting the variable in your own JS language file will only leave the default value. You need to clear the value:
TWGGlobal.lang['lbl_in_stock'] = '';
TWGGlobal.lang['lbl_out_of_stock'] = '';
Please note that your custom JS file should consist only those variables overrides that you need to be overridden.

As far as I understand this is some kind of customization? In any case the main Twigmo JS script should be changed for such purposes. Please contact us in Helpdesk or provide the store domain name here, we'll perform the changes for you.
