Note that most hostings will migrate your site for free if you ask. The trick is to shorten the TTL of the DNS entries to like 300 second so that when you shorten DNS, delay for customers to only be about 5 mins.
We also will increment the new system's order ID's forward by a 100 or so ... that way any orders that come in during the switch can more easily be inserted/imported into the new system.
Some of our clients get an order every few minutes.. so you can imagine the headache for DNS propagation.
