Hello all ,,,

we have some profile fields that we don't need (customer profile fields like : postal code ) how can i hide it or make it not required

Could you please provide a screenshot? Also want to note, that if you wish to make some profile fields as non required at the checkout, you need edit the Checkout layout page in this case:

i want to hide billing address fields from checkout (step by step checkout)
