I would like to know if it’s possible to use the cs-cart without shopping system, I mean I would like to use only the interface for putting online a products catalog.
I have already checked the demo but I didnt find an option for hiding the prices and disabling the cart.

There is an option to hide the prices and “add to cart” button for unlogged users. If you wanted to make this universal, you would just need to remove the links to the registration.
