Is it possible to setup a payment option that would allow the customer to enter their credit card info during secure checkout and then have all that card info show on the admin section for the store owner to then take that card info and process the transaction using an offline processing account like Square?
I can't figure out how to do it if it is. I thought that was what the "offline" option in the dropdown menu in the admin area was for.

You should select Offline in the Processor list and cc.tpl in the Template field on the editing payment method page.

OK. I figured that out but then the details were not visible in admin. Then figured out that you have to go to Administration->Order Statuses->Open and uncheck Remove CC info.

Please also make sure that the Remove CC info option is disabled for the Open status:
I tried using the above steps, but I can't uncheck it. When I hover my mouse over the checkbox to uncheck it, it just shows a round red icon telling me I can't uncheck that box.
Using version 4.3.8
Solved, for some reason when I switched from the Chrome browser to the IE browser, I was able to uncheck it.
