In our company we offer the customer different levels of shipping depending on the how quick they require the product.

FedEx 2nd day and FedEx Standard Overnight
Sure, but you should create 2 separate shipping methods for this
Yep. Just need to create more than one shipping method. There's also an addon we use that allows us to specify which shipping methods apply to which products.
