Can anyone give me a clue as to how to move the stock availaibility field from belwo the basket icon to be say nearer the top so it can be seen easier when changing variants.

There is no way to do it with styles. It is required to change template files
Products -> Features
Add a Feature group, add a feature, now you can show your stock on more areas on the product page.
