you’ll want to get an official answer from CS but I believe the product filtering will be included in a future version, as for your other questions those changes can be made fairly easily through editing the templates, also I would seriously consider having CS’s custom development team import your Zen-Cart store to CS, it would save you some headaches, it’s never an easy task to import from store to store, the configurations are so different ect…
