How to delete carriers?

How to delete carriers ? None of the default carriers are available in my country.

You need to delete the records from the ?:shipping_services table

I have disabled all payment methods on cs-cart admin area but they still show as selections on vendors panel, how to hide them ?

You can disable default carriers and add custom ones with our module
