Why is it that every time an order is placed on my site, the emails are sent to me, my email address?
Every time I update an order status, this happens too???

Check your order statuses in Orders->Order statuses. You should receive an email for any that have “Notify orders department” checked.

I think there is a bug in the store atm with the entire mail system as php mail doesn’t now notify the customer and people cannot contact me via the contact us button.

php mail works fine for me in both the scenarios you are mentioning above. Try changing over to sendmail and see if it works.
