Ever since I upgraded to 2.10 I’ve lost ecommerce reporting for orders placed using Paypal. It is pretty frustrating as I still get conversions when people pay using Eway (credit card).
CS Cart support were useless and blamed the problem on Analytics but I highly doubt this.
Any ideas what’s wrong?

I don’t know for sure, but there was a PayPal bug in the Bug tracker and discussed in the forum. This was for PayPal Express and upgrading to 2.1. You did not mention the PayPal method.
What is happening is this: A PayPal Customer gets redirected back to the cart content page rather than checkout page.
I would think if this happens, then Google Analytics would not see the sale.
