Default Variation Keeps Reverting Back

Hi - we have variants in colours, eg black, white grey with white as the primary/default one always.

Under products > features white is at the top Pos. 0 the rest 1>

On some items now even when setting the white option as 'default variation' if you click save at the top right I am having it revert to black?

(Running cscart 4.11.2)

If I'm not mistaken I think there is a setting somewhere where it reverts the default based on stock availability, might check that.
