Change Add To Cart Button?

Is there any way to change the Add to Cart button to something like GET QUOTE that uses a custom link - on some - but not all products.

All the products are in the same category though.

Most of the products on the store will be purchased as normal with an Add to Cart button - and only products from a certain catagory need this, will this do that or is it a store wide setting i.e applies to every product? Thanks
