How would I go about changing the icons used for the ratings? I've been trying to figure out where they image is stored, but I can't figure it out.

They aren't really images. They are part of the font. Kind of makes it a pain in the ass. You can either edit the font or you can just override it with the images that you want to use. It would be easier to just override it. It would take some playing with, but not too bad.
