Isn't the category description being shown on all pages of that category considered duplicate content…
I thought it was only supposed to show on the main category page… Not page-2. page-3. ect… ??

In the CS-Cart by default canonical and prev/next links are included in head section.

According to that article than only supports the category pages themselves. As in category page-2 and so on… This does not cover the content of the description… It will be considered duplicate content on page-2 vs…page-10…
Unless I'm way off here… That is how I'm understanding it.

prev and next tags help the search engine understand what the pages are parts of one big page. So, the each page contains the same description of this big page.
I do not think that Google considers the description of the category as a duplicated content on the secondary pages.
Maybe better to create “View all” page and make it as canonical url (https://support.goog…er/139066?hl=ru) for all pages in the category.

That makes more sense…
Google does not punish for duplicate content. Even if they did nothing really you put on an ecommerce site which is valid content - that is not the same bunch of external links on every page making up the whole content - would be deemed duplicate content. But that would be marked as spammy anyway.
