I’m scratching my head on this one.
So today I am busy with adding new products to the site. All is going well.
I needed to add an additional image to a product that had been created some time ago, not one I was creating today. I was able to add some text in the description but when I went to add the image, it would not save it or display it.
So, I have purged the template cache, deleted all browsing history and rebooted, renamed the image file and copied it to a diffferent location, only to have the same issue.
Thoughts?

Hmm, seems to be an issue with the image as I was able to save a completely different image
successfully!?
So I just saved it as a GIF from a JPEG and it worked just fine?!
