I know it's possible to show quantity for all items across the whole site, but is it possible to show items for only select products or categories only?
You can create separate template for products listing based on the default one and put it to the design/themes/THEME/templates/blocks/product_list_templates directory. It will be identified by the system automatically. All you need is just enable default template for specific categories and enable the custom one.
