We've on a few occasions needed to amend details on an order, either add products or change address details etc which in itself is fine but when one or more items on the order have subsequently been marked out of stock when an amendment needs to be made the out of stock product gets removed, why this happens I do not understand as it seems somewhat stupid to me but anyway it does it and I was wondering if there is a way to stop it as when something is out of stock our customers are often happy to wait!
But note that if you enable the "Allow negative inventory setting", it will affect not only the admin panel but also the storefront. Your customers will always be able to buy any product even it is out-of-stock.

Try to change order status to another one (with Inventory = Increase) before you edit the order. It will temporary return products back to stock and should solve your issue.
Thank you for the suggestions however none are really suitable as we cannot allow customers to order out of stock items and we use the out of stock email notice so this can be a problem with changing the status (adding items back into stock temporarily).

We are just trying to find free solutions for you. If they do not suit you, additional code modifications are required to change default behaviour.
